Pea and Parsley Salad

This fast salad makes a great side dish when you just don’t have much time. Peas are a great vegetable source of protein and fiber. The tomatoes are a terrific source of anti-oxidants, as well as being just plain delicious. Enjoy this for a fresh taste of summer.

  • 16 ounces (1 package) frozen peas
  • 1 cup tomatoes, diced
  • 1 scallion, thinly diced
  • ¼ cup parsley, chopped
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste


  1. In a microwave-safe serving bowl, combine frozen peas, a couple of tablespoons of water, and cover with microwave safe cling wrap. Microwave 2-3 minutes, until heated through.
  2. Stir in remaining ingredients and serve at room temperature.
